Tamiya :
Tamiya is also called falafel in other parts roots stretch
back to ancient Egypt. It is made with white beans or chickpea.
It is the alltime favourite and most common street food of Egypt and can be
consumed any time of the day
It can be consumed by itself as a snack, as a part of a salad or the most
common way is like a sandwitch with pita bread, tomato, onions and tahini
sauce.
Modified a bit to give a tasty and healthy twist. Have added beetroot and
stuffed it with feta cheese
Tahina sauce
50 gm tahina paste
5 ml lemon juice
10 ml olive oil
1 gm garlic paste
Pinch roasted cumin
powder
Salt to taste
Method
Mix all nicely and
make a smooth emulsion
Bread
Refined flour 60 gm
Water 20 ML
Milk 30 ML
OIL 10 ML
SALT TO TASTE
Method
Mix rest of the ingredients together.
Make dough and divide in roundles.
Roll and cook on a griddle.

Chick peas 100 gm
Onion 20 gm
Capsicum 20 gm
Beetroot 20 gm
Garlic 20 gm
Celery 20 gm
Parsley 20 gm
Baking
powder 1 pinch
Salt and pepper
to taste
Sesame seed 20 gm
Crushed
coriander 50 gm
Feta cheese for stuffing
Method:
Mince soaked chickpeas with onion, celery, garlic, capscium,
beetroot, salt and pepper.
- add chop parsley and a pinch of baking powder
-Make tikkis stuff with feta cheese
- crust tikki with crushed coriander and sesame seeds
- deep fry and serve hot
These can be consumed with tahina sauce and hummus, or with
pita bread or roll it in flat bread with tahini sauce, slice onion and tomato
julienne.
