Karan Puri 8 Mar, 2025

Step into the grandeur of the Mughal era and immerse yourself in a culinary journey that captures the richness, aroma, and royal indulgence of Mughlai cuisine. As you enter "The Great Kabab Factory" at Radisson Blu Plaza Delhi Airport, the air is filled with the enticing fragrance of slow-cooked spices, marinated meats, and delectable tandoor delicacies — setting the perfect mood for a majestic dining experience.

The ongoing Mughal Durbar food festival, running until 16th March, brings forth a curated selection of opulent Mughlai dishes, paying homage to the culinary legacy of the Mughals. Every bite tells a story of ancient royal kitchens, echoing the flavors once reserved for emperors and their royal courts.

From the melt-in-the-mouth Shahjahani Raan-e-Murgh to the aromatic Noormahali Gosht Zeerani Biryani, every dish is a tribute to the legacy of India's Royal Kitchens.
A Feast Fit for Royalty
The carefully crafted menu captures the rich culinary heritage of the Mughal era, offering an ensemble of kababs, curries, breads, and decadent desserts that transport guests to a bygone time of luxurious feasts and grand Darbars.
One of the festival’s standout dishes is the Murgh Hussaini — a cherished delicacy once served in the Shahi Mehfils of the Mughal courts. This exquisite dish features succulent chicken marinated in exotic spices and curd, infused with the enchanting aromas of rose and charcoal smoke, and finally skewered to perfection on a lava stone grill. The result is a tender, smoky delight that captures the very essence of royal Mughlai flavors.
For vegetarians, the festival brings a unique and regal delicacy — Paan Paneer Tikka. This masterful creation pairs soft cottage cheese with a luxurious stuffing of nuts, khoya, crushed paan leaves, and honey, lending it an exceptional depth of flavor. Marinated in hung curd and a delicate blend of whole Indian spices, the paneer is then roasted in the tandoor, acquiring a subtle smokiness that beautifully complements its rich filling. Finished with a touch of pineapple chutney, every bite of the Paan Paneer Tikka is an indulgent experience, leaving diners mesmerized.
A Regal Spread of Culinary Treasures
The grandeur doesn’t stop there. The Mughal Darbar menu showcases an array of dishes that capture the majestic essence of Mughlai cuisine. From the rich and succulent Shahjahani Raan-e-Murgh to the melt-in-your-mouth Anjeer Akhrot Khasta Tikki, the offerings are designed to treat your palate like royalty. The Sanaa Adraki Mutton Chaap and Jhinga Gulnar further enrich the menu, highlighting the diverse culinary gems of the Mughal empire.

The festival also features Mughlai Parantha, a flaky, stuffed bread that pairs perfectly with robust gravies and curries. For those who crave the grandeur of Mughal feasts, the Noormahali Gosht Zeerani Biryani — slow-cooked mutton biryani flavored with fragrant spices — promises an unforgettable experience of taste and tradition.

Indulgence Beyond the Main Course
The indulgence doesn’t end with the main course. The festival brings forth royal desserts that echo the richness of Mughal feasts. Pineapple Jalebi, Shula Muzzafar, and other decadent treats form the perfect ending to this regal culinary experience. Each dessert is thoughtfully curated to reflect the opulence and grandeur of Shahi Daawats, allowing guests to experience the sweetness of Mughal royalty.
