The North east food festival curated by chef Kush Koli celebrates the
rich culinary heritage of Northeast India with a modern interpretation.
Every course carried the soul of a different state, thoughtfully crafted with
authentic flavours, incredible technique, and heartfelt storytelling.
It is this diversity that Lore at Radisson Hotel Delhi MG
Road seeks to showcase through 7 Sisters, a seven-course tasting menu
running from July 1 to 21, with each course representing one of the
seven Northeastern states.
Meeting Chef Kush Koli and listening to the inspiration behind this menu made the experience even more meaningful.
From the beautifully plated dishes to the refreshing Khasi Cloud mocktail,
every detail reflected creativity, warmth, and excellence. The elegant ambience
and exceptional hospitality made this culinary journey truly unforgettable.
Complementing the dishes, the 7 Sisters Beverage Menu
features spirited tributes like the Naga Fire—where Tequila Reposado meets Bird
Eye Chilli Tincture—and the Assam Collins, which infuses gin with Earl Grey tea
and Kaffir Lime. Zero-proof selections include the Khasi Cloud, spotlighting
Meghalaya’s Khasi Mandarin juice.
“The Northeast cooks with instinct and memory. With ‘7 Sisters’, we’re not interpreting—we’re presenting,” notes Chef Kush Koli. “From smoked meats to cocktails with Burmese Grapes, every element is rooted in the region.”
Executive Chef Kush Koli, who says he learnt much of the
cuisine from home cooks and sources ingredients directly
from the region, isn’t interested in softening
these flavours for Delhi. Fermentation happens in-house, smoked
ingredients are prepared in the restaurant, and products such
as anishi (fermented yam leaves) are procured directly from
Nagaland to preserve authenticity.
